I view the cheese course as a repast from the past. Cheese tastings are a way for us to get back in touch with food cultures at risk of extinction. They are also a way to delve deeply into the pleasures of the table. They represent the tipping point of gastronomy.
Through tastings, I reveal the origin and cultural history of each cheese. I not only explain the order in which to eat the cheeses, but also demonstrate how to perfectly savor each one to its fullest. I discuss 1) the different types of cheeses; 2) cheese history; 3) cheesemaking; 4) cheese care. Every one of my cheese courses has a how-to dimension: How to approach the cheese plate? How to put together a cheese plate? How to pair cheeses with condiments (jam, mustard, honey, etc.)? How to properly rewrap and store leftover cheeses?
The price ranges from $20 to $50 per person depending on the number and type of cheeses, as well as beverages, condiments, and breads.
